  3. Heat oil in a frying pan over medium heat. Fry the eggplant slices in batches for 3–4 minutes per side until golden brown and tender, adding more oil as needed between batches.

  5. Add garlic to the pan and cook for 30 seconds until fragrant, then add chopped tomatoes and cook 5–6 minutes until softened.
  6. Return the fried eggplant to the pan, gently folding it into the tomato and garlic mixture, and cook 2–3 minutes more to combine flavours.
  7. Season with black pepper and additional salt if needed, garnish with fresh coriander, and serve warm.
