  • Smoked turkey leg or wing (about 400 g/14 oz) — 1
  • Chicken stock or water — 1.5 L (6 cups)
  • Collard greens, stemmed and roughly chopped — 1.5 kg (3.3 lb)
  • Medium yellow onion, diced — 1
  • Garlic cloves, minced — 3
  • Apple cider vinegar — 15 ml (1 tbsp)
  • Red pepper flakes — 3 g (1/2 tsp)
  • Salt and black pepper, — to taste

Method

  1. Place the smoked turkey leg in a large pot with the stock or water and bring to a boil. Reduce heat and simmer for 30 minutes.
  2. Remove the turkey, let it cool slightly, then pull the meat from the bone and shred it, discarding skin and bones.
  3. Add the onion and garlic to the pot and cook for 5 minutes until softened.
  4. Add the chopped collard greens in batches, stirring until wilted, then return the shredded turkey to the pot.
  5. Stir in the vinegar and red pepper flakes, cover, and simmer for 45–60 minutes until the greens are very tender.
