Ingredients
- Fine semolina — 720 g (1.6 lb)
- Plain flour — 120 g (4 oz)
- Butter or ghee, softened — 340 g (12 oz)
- Sugar — 100 g (3.5 oz)
- Ground mahlab — 1/2 tsp (optional)
- Warm milk, as needed — 120 ml (4 fl oz)
- Pitted dates, for the filling — 300 g (10.5 oz)
- Chopped walnuts, for an alternative filling — 140 g (5 oz)
- Sugar, for the walnut filling — 2 tbsp
- Cinnamon, for the walnut filling — 1/2 tsp
- Icing sugar, for dusting
Method
- Rub the softened butter into the semolina and flour until evenly combined, then let rest for 2 hours, or overnight for the best texture.
- Prepare the date filling by gently warming the pitted dates until soft and mashing into a smooth paste.
- Prepare the walnut filling by combining the chopped walnuts with sugar and cinnamon.
- Add the sugar, mahlab and enough warm milk to the rested semolina mixture to form a firm, smooth dough.
- Preheat the oven to 180°C (350°F).
- Divide the dough into balls, flatten each, and fill with either date or walnut filling, sealing the dough around it.
- Press each filled ball into a ma'amoul mould to create the traditional pattern, or press decorative lines with a fork.
- Bake for 20–25 minutes until pale gold, being careful not to over-brown.
- Let cool completely, then dust generously with icing sugar before serving.
