Ingredients
- Filo pastry sheets — 500 g (1 lb 2 oz)
- Spinach or leek, chopped — 500 g (1 lb 2 oz)
- Onion, chopped — 1
- Crumbled sirenje (or feta-style cheese) — 200 g (7 oz)
- Eggs — 3
- Oil, plus extra for brushing — 120 ml (4 fl oz)
- Salt and pepper — to taste
Method
- Sauté the onion in a little oil until softened, then add the chopped spinach or leek and cook until wilted; let cool.
- Combine the cooked greens with the crumbled cheese, 2 of the eggs and salt and pepper.
- Preheat the oven to 190°C (375°F).
- Layer sheets of filo in a round baking dish, brushing each with oil and scrunching slightly for texture, alternating with spoonfuls of the filling between layers.
- Continue layering until all the filling and pastry are used, finishing with a scrunched pastry top.
- Beat the remaining egg with a little oil and brush over the top.
- Bake for 35–40 minutes until deeply golden and crisp.
- Let cool slightly before slicing into wedges.
