Introduction: A generously prepared platter of whole baked fish in coconut sauce, made for community celebrations and shared feasts across Nauru.
Cultural Background: When Nauruan communities gather for celebrations such as Independence Day, several whole fish are often baked together and shared generously among family and neighbours, reflecting the centrality of fish and coconut to island hospitality.
Tips: Score each fish a few times on each side to help it cook evenly and absorb the coconut sauce. If using multiple dishes, rotate them in the oven partway through for even cooking.
Variations: Add a chopped chilli to the sauce for extra heat. Serve alongside coconut rice for a complete feast.
Storage: Refrigerate leftovers in an airtight container for up to 2 days.
Reheating: Reheat gently, covered, in an oven at 160°C (325°F) for 10–15 minutes to avoid drying out.
