  • Oil — 2 tbsp
  • Bay leaf — 1
  • Water — 3 cups (720 ml / 24 fl oz)

Method

  1. Heat the oil in a large pot and brown the pork pieces on all sides.
  2. Add the onion and carrot, and cook until softened.
  3. Stir in the tomato paste or chopped tomatoes, cooking for 5 minutes.
  4. Add the water and bay leaf, and bring to a boil.
  5. Cover and simmer for 40 minutes until the meat is nearly tender.
  6. Add the cubed potatoes and continue simmering for a further 20–25 minutes until the potatoes are tender.
  7. Season with salt and pepper, and garnish with chopped dill before serving.
