Ingredients

  • Large pickled or fresh cabbage, leaves separated — 1
  • Minced pork or a pork-beef mix — 400 g (14 oz)
  • Rice — 1/2 cup (100 g / 3.5 oz)
  • Onion, finely chopped — 1
  • Carrot, grated — 1
  • Tomato paste — 2 tbsp
  • Paprika — 1 tsp
  • Vegetable or meat stock — 2 cups (480 ml / 16 fl oz)
  • Oil — 2 tbsp
  • Salt and pepper — to taste

Method

  1. If using fresh cabbage, blanch the leaves briefly to soften; if pickled, rinse lightly if very salty.
  2. Combine the minced meat, rice, onion, carrot, paprika, salt and pepper in a bowl.
  3. Place a spoonful of filling on each cabbage leaf and roll up tightly, tucking in the sides.
  4. Arrange the rolls seam-side down in a large pot.
  5. Mix the tomato paste with the stock and pour over the rolls.
  6. Cover and simmer gently for 1.5–2 hours until the rice and meat are fully cooked and the cabbage is tender.
  7. Serve hot with mămăligă and sour cream.
