Method

  1. Combine the flour, sourdough starter, water and salt in a large bowl, mixing to form a shaggy dough.
  2. Knead for 10–12 minutes until smooth and elastic.
  3. Cover and let rise in a warm place for 4–5 hours, or until roughly doubled in size.
  4. Shape the dough into a round or oval loaf and place on a floured baking tray or into a Dutch oven.
  5. Let rise for a further 45 minutes.
  6. Preheat the oven to 230°C (450°F).
  7. Score the top of the loaf and bake for 35–40 minutes until deeply golden and hollow-sounding when tapped.
