Ingredients

  • Millet or sorghum flour — 2 cups (280 g / 10 oz)
  • Water, divided — 4 cups (960 ml / 32 fl oz)
  • Fresh okra, sliced — 300 g (10.5 oz)
  • Dried or fresh fish or meat — 200 g (7 oz)
  • Onion, chopped — 1
  • Tomatoes, chopped — 2
  • Oil — 2 tbsp
  • Salt — to taste

Method

  1. For the sauce, heat oil in a saucepan and sauté the onion until soft.
  2. Add the tomatoes and cook down for 5 minutes.
  3. Add the fish or meat and 1.5 cups of water, then simmer for 15 minutes.
  4. Add the sliced okra and continue simmering for 10 minutes until the sauce turns glossy and slightly thickened.
  5. Season with salt and set aside.
  6. For the tô, bring the remaining water to a boil in a heavy pot.
  7. Gradually whisk in the millet flour, stirring constantly to avoid lumps, until a thick paste forms.
  8. Reduce heat and continue stirring vigorously with a sturdy spoon for 8–10 minutes until the dough becomes smooth, stiff and pulls away from the sides of the pot.
  9. Shape the tô into a mound on a serving plate and serve alongside the okra sauce.
