Zitumbuwa (Banana and Maize Flour Fritters)
The Quirky Foodster Team

Ingredients
- Medium (about 300 g) Ripe bananas, mashed — 3
- Maize flour — 150 g (1 1/4 cups)
- All-purpose flour — 60 g (1/2 cup)
- Sugar — 40 g (3 tbsp)
- Baking powder — 4 g (1 tsp)
- Salt — 1 pinch
- Water, about 30–60 ml (2–4 tbsp) — as needed
- Cooking oil, for deep-frying — about 500 ml (2 cups)
Method
- In a bowl, mash the bananas until smooth.
- Stir in the maize flour, all-purpose flour, sugar, baking powder and salt.
- Mix well, adding water a little at a time, until a thick, scoopable batter forms (similar to a thick pancake batter).
- Heat the oil in a deep pan to about 170–180°C (340–350°F); it is ready when a small drop of batter sizzles and rises immediately.
- Carefully drop spoonfuls of batter into the hot oil, a few at a time, and fry for 3–4 minutes, turning occasionally, until deep golden brown and cooked through.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm, as is or dusted with a little extra sugar.
Introduction: Sweet, golden fritters made from mashed ripe banana and maize flour, deep-fried until crisp outside and soft within.
Cultural Background: Zitumbuwa is one of Malawi’s most affordable and widely loved sweet snacks, made by street vendors and home cooks alike using overripe bananas that might otherwise go to waste. It is commonly sold hot from roadside stalls and markets, wrapped simply in paper for customers on the move.
Tips: Use very ripe, even slightly overripe bananas for the best natural sweetness. Do not overcrowd the pan — fry in small batches so the oil temperature stays steady. Test the oil temperature with a small piece of batter before frying the full batch.
Variations: Add a pinch of ground cinnamon or nutmeg to the batter for extra warmth. Mix in a spoonful of desiccated coconut for a chewier texture. Serve with a drizzle of honey for a special-occasion touch.
Storage: Best eaten fresh the same day; store any leftovers in an airtight container at room temperature for up to 1 day.
Reheating: Reheat in a dry pan over medium heat for 1–2 minutes per side, or in an oven at 180°C (350°F) for 5 minutes, to restore some crispness.

FAQs:
Q: Why did my fritters turn out oily?
A: The oil was likely not hot enough; make sure it reaches 170–180°C (340–350°F) before frying so the batter seals quickly rather than absorbing oil.
Q: Can I bake these instead of frying?
A: Traditionally they are deep-fried, but for a lighter version, drop spoonfuls onto a greased tray and bake at 200°C (400°F) for about 15 minutes, turning halfway.
Q: Are these vegan?
A: Yes, as written they contain no animal products.
