Ingredients
- Chicken pieces (bone-in, skin-on), such as thigh or drumstick — 500 g (1 lb)

- Medium Onion, chopped — 1
- Medium Tomato, chopped — 2

- Medium Potato, cubed — 1

Method
- Heat the oil in the pot and briefly brown the chicken pieces on all sides, about 5 minutes.
- Add the onion and garlic, and cook for 3 minutes until softened.
- Stir in the chopped tomato and cook for 4–5 minutes until it breaks down.
- Pour in the water, add salt and pepper, and bring to a boil, skimming off any foam.
- Reduce heat, cover, and simmer for 25 minutes until the chicken is nearly tender.
- Add the carrot and potato, and continue simmering for a further 15–20 minutes until the vegetables and chicken are fully cooked and tender.
- Taste and adjust seasoning, then ladle into bowls to serve hot.
