Introduction: Whole cobs of young, tender maize boiled in salted water and eaten by hand — a simple seasonal treat enjoyed straight off the cob.
Cultural Background: During the maize harvest season, fresh green (unripened) cobs are boiled and sold hot at roadside stands and eaten as a snack throughout Malawi. It marks the arrival of the new harvest and is a much-anticipated seasonal pleasure, especially for children walking home from school.
Tips: Choose cobs with plump, milky kernels — press a kernel with a fingernail; if liquid squirts out, the maize is at the right young stage. Add a pinch of sugar to the water if the maize is not very sweet. Keep a lid on the pot to cook the cobs evenly all the way around.
Variations: Brush cooked cobs with a little butter or margarine and extra salt. Grill the boiled cobs briefly over hot coals for a smoky, charred finish. Rub cooked cobs with lime juice and a pinch of chili powder for a tangy twist.
Storage: Store any leftover cooked cobs in the refrigerator, covered, for up to 2 days.
Reheating: Reheat by steaming for 3–4 minutes or microwaving with a damp paper towel until warmed through.
