Ingredients

  • White rice, short or medium grain — 100 g (1/2 cup)
  • Water — 500 ml (2 cups)
  • Milk — 250 ml (1 cup)
  • Sugar, or to taste — 40 g (3 tbsp)
  • Cinnamon stick, optional — 1
  • Salt — 1 pinch

Method

  1. Rinse the rice well under cold water until the water runs clear.
  2. Combine the rice, water, salt and cinnamon stick in the saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes, stirring occasionally, until the rice is very soft.
  4. Mash the rice gently against the side of the pan with the spoon to break it down into a thick, semi-smooth porridge.
  5. Stir in the milk and sugar, and simmer uncovered for a further 5 minutes until creamy.
  6. Remove the cinnamon stick, ladle into bowls, and serve hot.
