Ingredients
- 400 g (2 cups) basmati rice, rinsed and soaked for 20 minutes
- 2 tbsp vegetable oil or ghee
- 1 small onion, finely chopped
- 1/2 tsp ground cumin
- 1/4 tsp ground cardamom
- 1 cinnamon stick
- 750 ml (3 cups) water or stock
- Salt, to taste
Method
- Heat the oil or ghee in a medium saucepan over medium heat and sauté the onion until softened, about 4 minutes.
- Add the cumin, cardamom and cinnamon stick, and cook for 1 minute until fragrant.
- Add the drained, soaked rice and stir to coat evenly in the spiced oil, toasting lightly for 1-2 minutes.
- Add the water or stock and salt, and bring to a boil.
- Reduce heat to low, cover tightly, and simmer for 15-18 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff with a fork, remove the cinnamon stick, and serve hot.
