  • 450g (1 lb) Pork shoulder, cubed
  • 4 cups Pounded cassava leaves (or finely chopped spinach as substitute)
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 30ml (2 tbsp) Vegetable oil
  • 240ml (1 cup, optional, coastal-style) Coconut milk
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 240ml (1 cup) Water

Method

  1. Heat the oil in a large pot and brown the pork on all sides.
  2. Add the onion and garlic and cook until fragrant.
  3. Stir in the cassava leaves, salt, and pepper.
  4. Pour in the water, cover, and simmer for 45 minutes to an hour, stirring occasionally, until the pork is tender and the leaves are dark and soft.
  5. If using coconut milk, stir it in during the last 10 minutes of cooking.
  6. Serve hot over rice.
