Ingredients

  • 600g (1 1/4 lbs) Pork shoulder, minced
  • 200g (7.1 oz) Pork liver, minced
  • 150g (5.3 oz) Pork belly, diced small
  • 2 Shallots, finely diced
  • 2 Garlic cloves, crushed
  • 2 tbsp (30g) Brandy
  • 1 Egg
  • 1 tsp (2g) Thyme
  • Salt and pepper, to taste
  • Bay leaves, for topping

Method

  1. Preheat the oven to 160°C (320°F).
  2. Combine the minced pork, liver, pork belly, shallots, garlic, brandy, egg, thyme, salt, and pepper thoroughly.
  3. Pack the mixture firmly into a terrine dish, pressing out air pockets, and top with a few bay leaves.
  4. Cover with foil and place the terrine in a roasting tin filled halfway with hot water.
  5. Bake for 80-90 minutes until the internal temperature reaches 70°C (160°F).
  6. Cool to room temperature, then chill overnight before slicing.
