  • 400 g (3 1/3 cups) brown bread flour or whole wheat flour
  • 100 g (3/4 cup) all-purpose flour
  • 7 g (2 1/4 tsp) instant dry yeast
  • 1 1/2 tsp salt
  • 1 tbsp brown sugar
  • 2 tbsp sunflower oil
  • 320 ml (1 1/3 cups) warm water

Method

  1. Combine both flours, the yeast, salt and sugar in the large bowl.
  2. Add the oil and warm water, mixing to form a soft dough.
  3. Knead for 10 minutes on a lightly floured surface until smooth and elastic.
  4. Place in an oiled bowl, cover, and leave to rise in a warm place for 45–60 minutes until doubled.
  5. Punch down, shape into a loaf, and place in the greased loaf tin.
  6. Cover and leave to rise again for 30–40 minutes until it crests just above the rim of the tin.
  7. Preheat the oven to 200°C (400°F).
  8. Bake for 35–40 minutes until deep golden brown and the loaf sounds hollow when tapped on the base.
  9. Turn out onto a wire rack and cool for at least 20 minutes before slicing.
