  • 1.5 kg (3.3 lb) goat or beef ribs or leg, cut into large pieces (bone-in preferred)
  • 2 tbsp (30 ml) vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp (10 g) grated ginger
  • 1 tbsp (15 g) coarse salt
  • 1 tsp (2 g) black pepper
  • 1 tsp (2 g) ground cumin (optional)
  • Juice of 1 lemon

Method

  1. Rub the meat all over with oil, garlic, ginger, salt, pepper, cumin (if using) and lemon juice. Let marinate for at least 1 hour, or ideally overnight in the refrigerator.
  2. Prepare a charcoal grill and let the coals burn down to a steady medium heat with a light layer of ash.
  3. Place the meat over the coals, not directly on the hottest flame, to allow for slow, even roasting.
  4. Grill for 45 minutes to 1 hour, turning occasionally, basting with any remaining marinade, until the meat is deeply browned outside and tender within.
  5. For thicker cuts, move to a cooler part of the grill and cover loosely to finish cooking through without burning the exterior.
  6. Rest the meat for 10 minutes, then carve into pieces and serve on a wooden board.
