(0)

Ingredients

  • 6 medium potatoes, peeled and cubed
  • 200 g (1 1/3 cups) fresh or frozen corn kernels
  • 200 g (1 1/3 cups) fresh or frozen peas
  • 150 g (5 oz) pumpkin leaves or spinach, chopped
  • 1 tsp (6 g) salt, or to taste
  • 2 tbsp (30 g) butter or margarine (optional)
  • Water, for boiling

Method

  1. Place the potatoes, corn and peas in a large pot, cover with water, and add salt. Bring to a boil and cook for 15-20 minutes until the potatoes are tender.
  2. Add the chopped greens to the pot for the last 5 minutes of cooking, allowing them to wilt.
  3. Drain, reserving a little of the cooking liquid.
  4. Mash everything together directly in the pot using a potato masher, adding a splash of the reserved liquid if needed to reach a soft, slightly chunky consistency.
  5. Stir in butter if using, and adjust salt to taste.
  6. Shape into a mound and serve warm alongside stew or grilled meat.

Introduction: Mukimo, also known as Irio, is a Kikuyu dish of mashed potatoes combined with maize, peas and pumpkin leaves or other greens, traditionally prepared for special occasions such as weddings and gatherings, though it is equally enjoyed as an everyday side dish.

Cultural Background: Mukimo, also known as Irio, is a Kikuyu dish of mashed potatoes combined with maize, peas and pumpkin leaves or other greens, traditionally prepared for special occasions such as weddings and gatherings, though it is equally enjoyed as an everyday side dish. Its vivid green colour and comforting, mash-like texture make it a distinctive and much-loved part of central Kenyan cuisine.

Tips: Mash while everything is still hot for the smoothest, most cohesive texture. Pumpkin leaves are traditional, but spinach or kale make good substitutes where unavailable. Leave a few pieces of corn slightly whole for authentic texture.

Variations: Some versions add mashed beans for extra protein and heartiness; a simpler version omits the greens. Naturally vegetarian; omit the butter or use a plant-based alternative to make it fully vegan.

Storage: Refrigerate in an airtight container for up to 3 days.

Reheating: Reheat in a covered pan over low heat with a splash of water, stirring, or microwave covered for 2 minutes.
