Ingredients
- 200 g (1 cup) brown lentils, rinsed (7 oz)
- 200 g (1 cup) short-grain rice, rinsed (7 oz)
- 3 large onions, thinly sliced
- 4 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 900 ml (3.75 cups) water (30 fl oz)
- 200 g (3/4 cup) plain yoghurt, to serve (7 oz)
Method
- Simmer the lentils in the water for 15 minutes until just tender.
- Meanwhile, fry the onions in 3 tbsp olive oil over medium heat, stirring occasionally, until deeply golden and caramelised, about 25 minutes. Remove half for garnish.
- Add the rice, cumin, salt and pepper to the lentils and remaining onions in the pot.
- Cover and simmer on low heat for 18 minutes until the rice is tender and liquid absorbed.
- Rest, covered, for 5 minutes off the heat.
- Fluff gently and top with the reserved caramelised onions.
- Serve warm or at room temperature with a side of plain yoghurt.
