Ingredients
- 250 g lotus root, peeled and thinly sliced (9 oz)
- 1 tsp rice vinegar (for soaking)
- 1 tbsp sesame oil
- 1 dried red chilli, sliced (optional)
- 2 tbsp soy sauce
- 1.5 tbsp mirin
- 1 tbsp sugar
- 1 tsp toasted sesame seeds, to garnish
Method
- Slice lotus root thinly into half-moons or rounds and soak briefly in water with rice vinegar to prevent discolouration; drain well.
- Heat sesame oil in a frying pan over medium heat and add dried chilli if using.
- Add lotus root and stir-fry for 3-4 minutes until edges turn slightly translucent.
- Add soy sauce, mirin and sugar, tossing to coat evenly.
- Continue cooking, stirring frequently, for 5-6 minutes until the liquid reduces to a glossy glaze and lotus root is tender-crisp.
- Remove from heat, sprinkle with toasted sesame seeds, and serve warm or at room temperature.
