Ingredients
- 500 g (1.1 lb) beef stew meat, cubed
- 200 g (7 oz) salted pork or beef, soaked and cubed
- 400 g (14 oz) callaloo (or spinach), chopped
- 150 g (5 oz) okra, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 2 sprigs thyme
- 1.5 L (6 cups) water
- Salt and pepper, to taste
Method
- Combine beef, salted meat and water in a pot and bring to a boil, skimming off any foam.
- Reduce heat and simmer covered for 1 hour until the meat is tender.
- Add onion, garlic, thyme and scotch bonnet, and simmer 15 minutes.
- Stir in callaloo and okra, and simmer 20 minutes until the greens are fully softened and the soup has thickened slightly.
- Season with salt and pepper, remove the whole pepper, and serve hot.
