Ingredients
- 2.5 kg (5.5 lb) whole smoked bone-in ham
- 2 bay leaves
- 1 tbsp black peppercorns
- 1 onion, halved
- Fresh horseradish root, grated, to serve
- Hard-boiled eggs, to serve
- Fresh bread, to serve
Method
- Place the ham in a very large pot and cover generously with cold water.
- Add bay leaves, peppercorns and onion.
- Bring to a gentle simmer (not a rolling boil) and cook, covered, allowing roughly 25-30 minutes per 500 g (1 lb).
- Skim any foam from the surface periodically.
- Remove the ham and let rest 15-20 minutes before slicing.
- Serve warm or cold, sliced, with freshly grated horseradish, hard-boiled eggs and bread.
