Ingredients

  • 500 g (4 cups) flour
  • 250 g (1 cup) cold butter, cubed
  • 200 g (1 3/4 cups) grated cheese
  • 10 g (2 1/4 tsp) instant yeast
  • 150 ml (2/3 cup) warm milk
  • 1 egg
  • 1 tsp salt
  • 1 egg yolk, for egg wash

Method

  1. Dissolve yeast in warm milk; let stand 10 minutes.
  2. Rub cold butter into the flour and salt until it resembles coarse crumbs.
  3. Stir in the grated cheese, egg and yeast mixture; bring together into a dough without overworking.
  4. Roll dough to about 2 cm (3/4 in) thickness, fold in thirds, and repeat 2-3 times for flaky layers.
  5. Cut into small rounds and score the tops in a crosshatch pattern.
  6. Brush with egg yolk and let rest 20 minutes.
  7. Bake at 200C (400F) for 18-20 minutes until golden and risen.
