- 100 g (7 tbsp) butter, softened
- 100 g (1/2 cup) sugar
- 200 g (7 oz) pork, cooked and shredded
- 150 g (1 cup) crumbled queso seco
- 1 tsp salt
- Corn husks, for wrapping
Method
- Blend the fresh corn kernels with butter, sugar and salt until you have a thick, slightly coarse batter.
- Lay out a corn husk and spoon a portion of the corn batter into the center.
- Top with a little shredded pork and crumbled cheese.
- Fold the husk over the filling and tie both ends with a thin strip of husk or twine.
- Steam the tamales for 45-55 minutes until firm and set.
- Let cool slightly before unwrapping and serving warm.
