- 120 g (1/2 cup) cold butter or shortening, cubed

- 300 g (10 oz) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1/2 tsp dried thyme
- 1/4 Scotch bonnet pepper, minced
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
- Vegetable oil, for frying (or use oven-baking)
Method
- Make the dough: combine flour and salt, then rub in the cold butter until the mixture resembles coarse crumbs.
- Add cold water gradually, mixing until a firm dough forms. Wrap and chill for 30 minutes.
- Meanwhile, make the filling: cook the ground beef in a skillet over medium heat until browned, breaking it up as it cooks.
- Add onion, garlic, tomato paste, thyme, and Scotch bonnet; cook 5-7 minutes until the onion is soft and the mixture is well combined. Season with salt and pepper, then cool completely.
- Roll out the chilled dough to about 3 mm (1/8 inch) thickness and cut into rounds about 12 cm (5 inches) across.
- Spoon a portion of the cooled filling onto one half of each round, fold over, and crimp the edges firmly to seal.
- Brush with beaten egg. Either deep-fry at 175°C (350°F) for 4-5 minutes until golden, or bake at 200°C (400°F) for 20-25 minutes until golden brown.
- Drain on paper towels if fried, and serve warm.
