Ingredients
- 1.2 kg (2 1/2 lb) whole chicken, spatchcocked
- 3 (3) limes, juiced
- 4 (4) garlic cloves, minced
- 2 (2) malagueta or bird's eye chilies, chopped
- 2 tbsp (2 tbsp) oil
- 1 tsp (1 tsp) ground black pepper
- Salt to taste
Method
- Combine the lime juice, garlic, chili, oil, black pepper and salt in a bowl to make the marinade.
- Rub the marinade all over the spatchcocked chicken, cover, and refrigerate for at least 4 hours, ideally overnight.
- Prepare a grill or barbecue for medium-hot, indirect heat.
- Grill the chicken skin-side down first for 15 minutes, then turn and continue grilling for a further 30-35 minutes, turning occasionally, until fully cooked through.
- Rest for 10 minutes before carving and serving.
