- 115 g (1/2 cup) butter, softened
- 150 g (3/4 cup) brown sugar
- 2 (2) eggs
- 180 ml (3/4 cup) buttermilk
- 5 ml (1 tsp) vanilla essence
Method
- Preheat oven to 175°C (350°F) and grease a loaf tin.
- Whisk flour, baking powder, baking soda, salt, nutmeg and cinnamon together.
- In a separate bowl, cream butter and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Alternate folding in the dry ingredients and buttermilk in three additions, mixing just until combined.
- Pour batter into the prepared loaf tin and bake 45–50 minutes until a skewer inserted in the centre comes out clean.
- Cool in the tin 10 minutes, then turn out onto a wire rack to cool fully before slicing.
