Ingredients

  • 800 g (1 3/4 lb) pork shoulder, cubed
  • 60 ml (1/4 cup) olive oil
  • 30 ml (2 tbsp) lemon juice
  • 2 cloves (2 cloves) garlic, minced
  • 1 tsp (1 tsp) dried oregano
  • 1 tsp (1 tsp) sweet paprika
  • Salt and pepper to taste
  • 8 (8) wooden skewers, soaked

Method

  1. Combine olive oil, lemon juice, garlic, oregano, paprika, salt and pepper in a bowl.
  2. Add pork cubes and toss to coat; marinate for at least 2 hours, ideally overnight.
  3. Thread pork onto skewers, leaving small gaps between pieces for even cooking.
  4. Preheat grill to high heat.
  5. Grill skewers for 10–12 minutes, turning occasionally, until charred and cooked through.
