Ingredients

  • 1 kg (7 cups) coarsely fermented corn dough (unsieved)
  • 500 ml (2 cups) palm nut cream (fresh or canned)
  • 200 g (7 oz) smoked fish, flaked
  • 1 onion, chopped
  • 1 scotch bonnet pepper
  • Salt, to taste
  • Palm oil, as needed

Method

  1. Steam the coarse, unsieved fermented corn dough over boiling water for 30-40 minutes until fully cooked and slightly grainy in texture.
  2. Meanwhile, simmer the palm nut cream in a pot with onion, scotch bonnet and a little salt for 20 minutes until the oil rises.
  3. Add the flaked smoked fish to the palm nut sauce and simmer for a further 10 minutes.
  4. Turn the steamed corn dough out into a large bowl and pound briefly to loosen and separate the grains.
  5. Pour the hot palm nut and fish sauce over the corn dough, mixing gently to combine.
  6. Serve as part of the Homowo festival meal, traditionally shared among family and offered symbolically to the household.
