Tobaski Roast Lamb (Eid al-Adha Feast) (Yambaa Tobaski)

Ingredients
- 1.5 kg (3 1/3 lb) lamb or mutton, bone-in pieces
- 4 cloves garlic, minced
- 2 tbsp fresh ginger, grated
- 2 tbsp vegetable oil
- 1 tbsp ground black pepper
- 1 tsp ground cumin
- 2 scotch bonnet chillies, finely chopped
- 2 onions, quartered
- Salt, to taste
Method
- Combine the garlic, ginger, oil, black pepper, cumin, chopped chillies and salt into a marinade paste.
- Rub the paste all over the lamb pieces, working it into slashes cut in the thicker parts of the meat.
- Marinate for at least 2 hours, or overnight in the fridge for best flavour.
- Arrange the lamb and onion quarters on a roasting tray or over a charcoal grill.
- Roast or grill over medium heat for 60-75 minutes, turning and basting occasionally with pan juices, until deeply browned and tender.
- Rest for 10 minutes before carving and serving to the gathered family and community.
