  • 300 g (2 1/2 cups) wholemeal flour
  • 100 g (3/4 cup) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 350 ml (1 1/2 cups) buttermilk
  • 1 tbsp melted butter

Method

  1. Preheat oven to 190°C (375°F) and grease a loaf tin.
  2. Combine wholemeal flour, all-purpose flour, baking soda, salt and brown sugar in a bowl.
  3. Make a well in the center and pour in the buttermilk and melted butter, mixing gently until just combined.
  4. Pour the batter into the prepared loaf tin, smoothing the top.
  5. Bake for 45–50 minutes until firm and a skewer inserted comes out clean.
  6. Cool on a wire rack for at least 15 minutes before slicing.
