Lenten Stuffed Cabbage Rolls

Ingredients

  • 1 large head pickled or fresh cabbage, leaves separated (12-16 leaves)
  • 200 g (1 cup) short-grain rice, rinsed
  • 200 g (3 cups) mushrooms, finely chopped
  • 1 large onion, finely diced
  • 2 carrots, grated
  • 3 tbsp sunflower oil, divided
  • 2 tbsp tomato paste
  • 500 ml (2 cups) vegetable stock
  • 1 tsp sweet paprika Salt and black pepperSalt and black pepperto taste
  • 2 tbsp fresh parsley, chopped

Method

  1. If using fresh cabbage, blanch the whole head in boiling water for 3-4 minutes to soften the leaves, then carefully peel off individual leaves. If using pickled cabbage, rinse leaves lightly if very sour.
  2. Heat 2 tablespoons of oil in a frying pan and sauté the onion until translucent, about 5 minutes.
  3. Add the mushrooms and carrots, cook for 8-10 minutes until softened and most liquid has evaporated.
  4. Stir in the rice, paprika, salt, and pepper, and cook for 2 minutes to coat the rice in the oil.
  5. Remove from heat and let the filling cool slightly. Trim the thick central rib from each cabbage leaf.
  6. Place a spoonful of filling near the stem end of each leaf, fold in the sides, and roll up tightly into a compact parcel.
  7. Line the bottom of a large pot with any torn or spare cabbage leaves, then arrange the rolls snugly, seam-side down, in layers.
  8. Whisk the tomato paste into the vegetable stock and pour over the rolls, adding water if needed to just cover them.
  9. Drizzle the remaining oil on top, cover, and simmer gently for 1 to 1.5 hours, until the rice is fully cooked and the rolls are tender.
  10. Let rest for 10 minutes, then serve warm, spooned with cooking juices and scattered with parsley.
