Ingredients

  • 500 g (4 cups) Plain flour
  • 7g (2 1/4 tsp) Instant yeast
  • 60 g (1/4 cup plus 1 tbsp) Sugar
  • 300 ml (1 1/4 cups) Coconut milk, warmed
  • 50 g (1/2 cup plus 2 tbsp) Desiccated coconut
  • 1 tsp Salt
  • 40 g (3 tbsp) Butter, softened

Method

  1. Mix flour, yeast, sugar, salt and desiccated coconut in a large bowl.
  2. Add warm coconut milk and softened butter, mixing to form a dough.
  3. Knead for 10 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover and prove for 1 hour until doubled.
  5. Punch down, shape into a loaf and place in a greased loaf tin.
  6. Prove for a further 30 minutes, then bake at 190°C (374°F) for 30–35 minutes until golden and hollow-sounding when tapped.
  7. Cool on a wire rack before slicing.
