Ingredients
- 800 g (1 3/4 lb) Chicken thighs, bone-in
- 2 medium Onion, sliced
- 4 cloves Garlic, minced
- 2 tbsp Ginger, grated
- 3 tbsp Curry powder
- 2 medium Tomatoes, chopped
- 250 ml (1 cup) Coconut milk
- 3 tbsp Cooking oil
Method
- Heat oil in a large pot and fry onion until golden.
- Add garlic and ginger, cook for 1 minute until fragrant.
- Stir in curry powder and toast for 30 seconds.
- Add chicken pieces, browning on all sides.
- Add tomatoes and cook until they break down, about 5 minutes.
- Pour in coconut milk, cover and simmer for 35 minutes until chicken is tender.
- Serve over steamed rice.
