- 1 small Red onion, sliced
- 3 Garlic cloves, minced
- 1 tsp Fresh ginger, minced
- 30 ml (2 tbsp) Vegetable oil
- 100 ml (1/3 cup) Water
- 3/4 tsp Salt
Method
- Heat the oil in a large frying pan and sauté the onion until softened, about 5 minutes.
- Add the garlic and ginger and cook for 1 minute until fragrant.
- Add the chopped collard greens in batches, stirring to wilt them down.
- Pour in the water, cover, and cook for 10–12 minutes, stirring occasionally, until tender.
- Season with salt and serve warm.
