Ingredients

  • 500g (4 cups) bread flour
  • 300ml (1 1/4 cups) warm water
  • 7g (2 1/4 tsp) instant yeast
  • 10g (2 tsp) salt
  • 1 tsp sugar

Method

  1. Dissolve the yeast and sugar in the warm water and leave for 10 minutes until foamy.
  2. Combine the flour and salt in a large bowl, then add the yeast mixture. Mix and knead for 10 minutes until smooth and elastic.
  3. Cover and prove for 1 hour, or until doubled in size.
  4. Knock back the dough and shape into 8 small rolls or 2 long loaves. Place on a lined tray.
  5. Cover and prove for a further 30 minutes, then score the tops with a sharp blade.
  6. Bake at 220°C (425°F) for 20–25 minutes until golden and hollow-sounding when tapped underneath.
