Ingredients

  • 1.5kg rooster or chicken, cut into pieces
  • 500ml (2 cups) chicha (fermented corn and pineapple drink) or substitute apple cider mixed with a splash of dark beer
  • 100g (1/2 cup) dulce de tapa (panela), grated, or dark brown sugar
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 green bell pepper, sliced
  • 2 bay leaves
  • 1 tsp ground cumin
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste

Method

  1. Season the chicken pieces with salt, pepper and cumin.
  2. Heat the oil in a large pot and brown the chicken pieces on all sides. Remove and set aside.
  3. In the same pot, sauté the onion, garlic and bell pepper until softened.
  4. Add the tomatoes and cook for 5 minutes until they break down.
  5. Return the chicken to the pot, pour in the chicha, and add the grated dulce de tapa and bay leaves.
  6. Bring to a gentle simmer, cover, and cook for 45-50 minutes until the chicken is tender and the sauce has thickened and turned glossy.
  7. Remove the bay leaves, adjust seasoning, and serve hot with rice or tortillas.
