Ingredients

  • 4 large eggs
  • 400g (2 cups) refried red beans, warmed
  • 2 ripe plantains, sliced lengthways
  • 3 tbsp vegetable oil, divided
  • 8 Salvadoran-style tortillas (thick, 10cm) or 8 corn tortillas
  • 120g (1/2 cup) queso fresco, crumbled
  • 60ml (1/4 cup) crema (or sour cream)
  • 1/4 tsp salt, to taste

Method

  1. Heat 1 tbsp oil in a frying pan over medium heat and fry the plantain slices for 2-3 minutes per side until golden and caramelised. Set aside.
  2. In the same pan, add a little more oil and fry the eggs to your liking (sunny-side up is traditional).
  3. Warm the refried beans gently in a small saucepan, adding a splash of water if they're too thick.
  4. Warm the tortillas on a dry comal or griddle for about 30 seconds per side.
  5. Arrange eggs, beans, plantain and tortillas on a plate.
  6. Top the beans with crumbled queso fresco and a drizzle of crema.
  7. Serve immediately with black coffee.
