Ingredients

  • 1.5 kg Goat meat, bone-in, cut into large pieces (3 1/3 lb)
  • 150 g Onion, grated (1 large)
  • 5 Garlic cloves, minced (5 cloves)
  • 20 g Fresh ginger, grated (2 tbsp)
  • 45 ml Lime juice (3 tbsp)
  • 45 ml Vegetable oil (3 tbsp)
  • 5g Chili powder (1 tsp)
  • 1 Bouillon cube, crumbled (1 cube)
  • 8g Salt (1 1/4 tsp)

Method

  1. Combine the onion, garlic, ginger, lime juice, oil, chili powder, bouillon cube and salt in a large bowl to make the marinade.
  2. Add the goat pieces and massage the marinade thoroughly into the meat.
  3. Cover and refrigerate for at least 4 hours, ideally overnight, for the best flavour.
  4. Prepare a charcoal grill for medium heat, or preheat an oven grill (broiler) to high.
  5. Grill the goat pieces for 12-15 minutes per side, basting occasionally with any remaining marinade, until well charred outside and cooked through.
  6. Rest the meat for 5 minutes before serving, cut into smaller pieces for sharing.
