Ingredients

  • 300 g Plain flour
  • 60 g Fine cornmeal
  • 400 ml Warm water
  • 5g Instant yeast
  • 2g Ground cardamom
  • 2g Ground cinnamon
  • 20 g Sugar
  • 4g Salt
  • 30 g Butter, melted, to finish
  • 150 g Plain yogurt, to serve

Method

  1. Whisk together the flour, cornmeal, yeast, cardamom, cinnamon, sugar and salt in a large bowl.
  2. Gradually whisk in the warm water to form a smooth, pourable batter.
  3. Cover and leave to ferment at room temperature for 1.5-2 hours, until bubbly.
  4. Heat a lightly greased griddle or pan over medium heat and pour a ladleful of batter, spreading slightly into a thick round.
  5. Cover with a lid and cook for 3-4 minutes until the top sets and small holes appear, then flip and cook for a further 1-2 minutes.
  6. Stack the cooked cambaabur and drizzle with melted butter.
  7. Serve warm, topped generously with plain yogurt.
