Europe
Potato Ricer
Germany and France

A hinged press with a perforated chamber used to force cooked potatoes through small holes, producing a fine, lump-free texture prized for smooth mashed potatoes and gnocchi dough.
Material & Construction
Stainless steel or aluminum construction, with a hinged lever arm that forces a plunger through a perforated cylindrical chamber.
Traditional Uses
Pressing cooked, peeled potatoes into fine strands for mashing or for gnocchi dough, producing a texture finer and less gluey than hand-mashing.
Modern Availability / Equivalents
A food mill serves a similar function for a wider range of foods; a potato masher is a coarser but common substitute where a ricer isn't available.
Care & Maintenance
Rinse immediately after use before starch dries and clogs the perforations; dry fully to prevent rust on non-stainless versions.
