Jhara

Indian subcontinent broadly

A flat, perforated metal skimmer used for deep-frying, lifting fried items such as pakoras and puris out of hot oil while allowing excess oil to drain back into the pan.

Material & Construction

A shallow, perforated or wire-mesh disc mounted on a long handle, sized to reach across a kadhai's curved base.

Traditional Uses

Lifting and draining deep-fried foods in a single motion, and occasionally skimming foam or impurities from boiling liquids.

Modern Availability / Equivalents

A Western spider strainer or slotted spoon serves an equivalent function; both are now common in Indian kitchens alongside the traditional jhara.

Care & Maintenance

Hand-wash and dry fully; the fine mesh or perforations trap oil residue and should be scrubbed rather than just rinsed.
