Niboshi Dashi

A variant dashi made by steeping dried whole sardines (niboshi) instead of, or alongside, katsuobushi, producing a stronger, more assertively fishy stock than standard kombu-katsuo dashi.

Flavor Profile

Robust and distinctly fishy, stronger and less delicate than standard dashi.

Culinary Uses

Base for heartier miso soups and rustic noodle broths where a more pronounced fish flavor is desired.

Regional Variations

Some versions remove the bitter heads and innards of the niboshi before steeping to produce a cleaner-tasting stock; ratios of niboshi to water vary by desired intensity.

Best used fresh; refrigerate up to 2 days.
