Grappa (Italy) and Marc (France) are both made by distilling pomace — the skins, seeds, and stems left over after pressing grapes for wine — rather than the grape juice/wine itself. Traditionally a rustic, sometimes harsh spirit, though modern producers have significantly improved quality, and some are now aged and quite refined.
