Introduction: A tangy, fermented rye soup with sausage and egg, one of Poland's most distinctive and beloved traditional soups.
Cultural Background: Żurek's distinctive sour flavour comes from fermented rye flour (zakwas), a technique reflecting Poland's deep culinary heritage, and the soup is especially cherished during Easter celebrations, often served in a bread bowl.
Tips: Zakwas can be made at home by fermenting rye flour with water for several days, or purchased ready-made from Polish delis. Simmer gently once the cream is added to avoid it splitting.
Variations: Serve in a hollowed-out bread bowl for a traditional presentation. Add diced potato for a heartier version.
Storage: Refrigerate in an airtight container for up to 3 days.
Reheating: Reheat gently on the stovetop over low heat, stirring occasionally, until hot throughout.
