Method

  1. Combine flour, yeast, sugar, and salt in a bowl. Gradually whisk in warm water to form a smooth, thick, pourable batter.
  2. Cover and let rise in a warm place for 1 hour, until bubbly.
  3. Meanwhile, make the syrup: combine sugar, water, and lemon juice in a saucepan, bring to a boil, and simmer 5 minutes until slightly thickened. Set aside to cool.
  4. Heat oil to 175°C (350°F). Pipe or spoon small rounds of batter into the hot oil, frying in batches for 3-4 minutes until deep golden and crisp.
  5. Drain briefly on paper towels, then dip immediately into the cooled syrup.
