Ingredients

  • Large eggplants — 2
  • Tomatoes, grated or finely chopped — 4
  • Garlic, minced — 3 cloves
  • Ground cumin — 1 tsp
  • Paprika — 1/2 tsp
  • Cayenne — 1/4 tsp (optional)
  • Olive oil — 1/4 cup (60 ml / 2 fl oz)
  • Chopped coriander and parsley — 2 tbsp
  • Salt — to taste

Method

  1. Roast or grill the whole eggplants until the skin is charred and the flesh is very soft, about 25–30 minutes; let cool, then peel and mash the flesh.
  2. Heat the olive oil in a frying pan and sauté the garlic briefly.
  3. Add the grated tomato, cumin, paprika and cayenne if using, and cook for 10–12 minutes until the mixture thickens.
  4. Stir in the mashed eggplant and cook for a further 8–10 minutes, mashing further with a fork, until the mixture is well combined and slightly jammy.
  5. Season with salt and stir in the chopped herbs before serving warm or at room temperature with bread.
