Yellowman Tiffin Bars

Ingredients

  • 200g milk chocolate, chopped; 100g dark chocolate, chopped
  • 125g Irish butter
  • 2 tbsp golden syrup
  • 150g digestive biscuits, roughly crushed
  • 100g Yellowman honeycomb (or store-bought honeycomb/Crunchie bars), broken into small chunks
  • 50g dried cranberries or raisins (optional)

Method

  1. Line a 20cm (8-inch) square baking tin with parchment paper.
  2. In a large heatproof bowl set over a pot of gently simmering water (or in short bursts in the microwave), melt the milk chocolate, dark chocolate, butter, and golden syrup together until completely smooth.
  3. Remove from the heat and allow to cool slightly for 2-3 minutes.
  4. Stir the crushed digestive biscuits, broken honeycomb chunks, and dried fruit (if using) into the melted chocolate mixture until everything is thoroughly coated.
  5. Tip the mixture into the prepared tin and press down firmly and evenly using the back of a spoon to create a solid block.
  6. Refrigerate for at least 2 hours until completely hard. Use a sharp knife dipped in hot water to slice into clean squares or bars.

‘Yellowman’ is a famous, crisp, hard honeycomb confectionery originating from Northern Ireland (frequently sold at the Ould Lammas Fair). This recipe crushes that classic honeycomb into a no-bake chocolate tiffin bar.
