Ingredients
- Small tapioca pearls — 100 g (1/2 cup)
- Water — 750 ml (3 cups)
- Coconut milk — 400 ml (14 oz)
- Sugar, or to taste — 100 g (1/2 cup)
- Vanilla extract — 1/2 tsp
- Of salt — pinch
Method
- Rinse the tapioca pearls under cold water.
- Bring the water to a boil in a saucepan and add the tapioca pearls.
- Reduce heat and simmer for 15-20 minutes, stirring occasionally, until the pearls turn translucent.
- Stir in the coconut milk, sugar, vanilla and salt.
- Simmer a further 5 minutes until well combined and slightly thickened.
- Serve warm, or chill and serve cold.
